Hey, It's Okay Tuesday!

Airing My Dirty Laundry

I have missed doing an It's Okay post and right now I am in real need of an It's okay so I was happy to find It's Okay Tuesday with Airing My Dirty Laundry!

It's Okay:

-That my hormones are all over the place lately.  I swear I hit my mid-40's and a switch went off. I find myself crying over nothing all the time.  I am waiting for people to come with the straight jacket.
-That I get super frustrated over how poorly organized the girls softball league is in our town.  They seem to not have a clue when or where the games are until game day and it is really hard to be a parent or step-parent and try and schedule and plan and get off work early for games that are cancelled 30 minutes before game time.

-That all I want for Cinco De Mayo is sleep.  No margaritas or fajitas or tacos, just sleep.

-That our baby chicks are about 3 weeks old and so awkward looking.  They have feathers and fuzz and they are pretty ugly right now but they are getting so big!  I can't believe how fast they grow.  We have 12 now and I am hoping to convince my husband to get 4 more if we can find the right kind.  I want 2 Silkies and 2 Ameraucanas.

-That I really want to order Shari's berries for myself for Mother's day because I know the dogs and chicks aren't going to think about it.

-That I am thinking about suspending my Facebook account.  The one with everyone on it.  I am so stressed out by everyone's opinions and my immediate family has to take priority.

-That I am really looking forward to spending some time with my hubby at the ballpark.   We haven't been to a baseball game together yet this season so it will be fun being alone with him, and 30,000 of our closest friends.

-That I have not painted a piece of furniture in a week.   Last weekend I spend painting the chicken coop before we got rain for the next week.  I have the base white on but I still need to get the roof and trim colors painted.

-That I haven't been on my bike in a year.  I really need to find some time and take the bike out for a ride.

-When I am feeling blue, I turn to Dr. Suess for advice:

Why I will ALWAYS stand with the Thin Blue Line

Thursday Favorite Things Button

I don't normally link these blogs up but I am going to be honest, I got so many positive comments on Twitter to this blog that I felt like even though this isn't a recipe or craft or fun blog, it was absolutely my favorite blog this week and I needed to share, for those that care about this topic.  So just know, this is more a need not a want.

The Thin Blue Line

I am going to be honest, I am not objective on this subject.  I have one sibling who walks this earth and that sibling wears a badge.  I could not be prouder of the person my sibling is or the career chosen, by God, for my sibling to work.

My sibling is an honest, loving, dedicated individual.  There aren't sick days or bad days for my sibling.  There can't be.  There are 6 kids at home that need my sibling to return every night along with a spouse, mother, and sister, just to name a few.  So understand that for me, for my nieces and nephews sake, and that of my family,  my view of police is to support them 100%.  That doesn't mean I don't think some of the issues are not valid.  That means I believe that 99.9% of the men and women who walk the line are walking it the right way.

See, I know that police are real people.  I know that police are only human and they live a stressful job. I have heard stories for years about the generally crazy people that my sibling has met at work.   Some stories are funny, actually hilarious, like the lady who thought aliens or the government had bugged her house.  Nobody tells a better story than my sibling.  Nobody has a bigger heart either, even if you don't see it.

I also know the reality is that when I get pulled over that officer doesn't know if I have a weapon.  I behave appropriately.  I know not to make any stupid moves. Pull out your license and registration and sit still.   I know to be respectful and say "yes and no" and occasionally "Sir or Ma'am". I don't behave like the world owes me something and the police are taking it from me, either.  I believe the world owes me, you, and everyone else nothing so I am not walking around with a chip on my shoulder and a target on police.

I realize that every time they step out that door in uniform they are required to uphold the law.   The law regardless of race, religion, or personal beliefs, is the law.  Break the law you go to jail.  Resist arrest and charge a police officer you risk the officer feeling you are a threat and you may get shot.  Police are not taught to shoot to injure, they are taught to shoot to kill.

Shoot to kill:
If you deal with people all day long you know there are rational and reasonable people, there are emotionally crazy people and there are just pure lunatics.   Too bad they don't wear signs so the officer can tell who is really crazy, who is temporarily crazy and who just seems crazy.

source

With all the media attention on the recent events, police have gotten a bad name.  Police who have to make life or death decisions in a split second.  Police who know when they walk out the door, they may not walk back in.  As an average citizen, I realize that if I run from the police, give them reason to be suspicious of me, or attack them, I take my life in my own hands.  With a few exceptions, I do not believe the police acted in any way other than what they had to in the events that lead to the unfortunate death of normal people.  By the way, the media attention is focused on only one side of the police shootings.  There are police that die too.  When was the last time that made the national news?  I could go on about the media and their culpability in the misinformation they promote, but I won't.

In the end, you see, officers are human.  Officers who deal with too much crap.  There are terrorists out there walking among us. There is organized crime everywhere.    There are domestic disturbance where you never know how unhinged people are. There are kids carrying guns to be cool to school.  Even this morning, in the small town I live in, as I dropped off my step-daughter, there was an officer circling the middle school.  My guard immediately went up.  That isn't normal. Why are they circling?  Is there a threat?   The police were there to protect the kids and I knew, if an officer is in uniform they are on duty.  They will protect and serve.

I made the mistake once while traveling with my sibling of telling someone my sibling was a police officer.  The individual I told, it turns out, was about to go to prison for stealing a truck...a semi.  My sibling wasn't in uniform so nothing said "Police".  Luckily it turned out okay but it was a stupid thing to do.  You never know how a person could flip.  What was  an innocent comment, could have ended up ugly.  My sibling did not have a gun if someone pulled one.  My sibling had no way to protect anyone.  That is a reality if you are a police officer.

So why do it?  I don't know.  It is a thankless job.  People yell profanity at you, spit on you, treat you like crap.  Are police cocky?  Sure, most are, they have to be.  You must have a really thick skin to be an officer of the law.  You can't take the negativity personally.  You must be constantly on guard because criminals don't wear name tags.

People become unhinged over nothing.  Don't think so?  Look back on your last fight with your spouse, significant other, best friend, or mother.    What was it about? How angry were you?  Was anyone behaving rationally?

Sometimes when my husband and I argue, he is crazy.  Sometimes I am crazy. Luckily we aren't usually crazy at the same time.  We say things we don't mean.  We get mad over nothing.    As an officer of the law, you deal with all kinds of crazy and there is simply nobody more qualified, better trained, or who put more on the line, on a daily basis than your police.   Respect them and they will respect you back.  Disrespect them, argue with them, run from them, shoot at them, and people could die.

So why today?  I have been thinking of this blog for a long time.  I never thought I could do this subject justice.  I haven't even come close.    I write today because here in a suburb of Dallas this morning,I woke up to the news of an officer involved shooting.   Apparently, two people drove from Arizona, shot a Garland ISD unarmed security officer, (thankfully he will be okay), and tried to possibly attack a group of innocent individuals at an political exhibit.  It's too early to tell if the individuals are terrorists however the FBI bomb squad was on hand and ISIS connections have been mentioned.  The suspects are dead.  I am not going to cry for them.  They broke the law.  I am going to pray for the rest of us, that we all learn to step back, not get angry first, wait for facts to come out, and hug a police officer the next chance you get.  Make friends with  your local police not enemies.  Do bad things happen, yes they do.  Bad things happen all the time but most of the time, the police are there to prevent them and for me personally, I don't want to live in a world where police don't exist because I am just not that accurate of a shot.

Sunday Dinner: Southern Style

Thursday Favorite Things ButtonHump Day Happenings

This turned out so great that I have to share with pretty much everyone so I linked up to a couple of super great hops. I love these hops and the wonderful ladies behind them.  If you haven't checked out the hops above, please join in.  There are a ton of great sponsors and so many crafty and talented people not to mention good cooks.  I don't usually do cooking blogs (It isn't that I can't cook, it's that when I cook I cook by taste, not a book and I never think to get photos before the food is devoured.  So I hope y'all enjoy this once in a blue moon blog.)

I have never made Turnip Greens or any kind of greens for that matter in my life.   We like turnips and when I was at the store I bought a bunch of seeds.  I thought they were all turnip seeds but some where turnip green seeds.  So we have a ton of turnip greens growing along with turnips and I thought after 30 years in Texas it was about time I tried making greens.

And since I was making greens it seemed natural to have them with pork.  Pork ribs to be exact.  So I slow cooked the ribs in the oven for about 2 hours in beer (I like cooking and baking with alcohol) and onion flakes, seasoned with garlic and season salt.   Once they were practically falling off the bone it was time to move them to the grill...and add sauce.  They get done really fast so watch them, unless you are like us and like them a little BBQ black.  Actually it is just the fat that burned a little but believe me, everyone loved these!

I make a semi-homemade sauce with a mix of Stubbs and Sweet Baby Ray's plus vinegar, onion flakes, garlic, and some fresh ground pepper.  Cook on low for about an hour then go crazy with your sauce and ribs.  Yum!

Next up was garlic cheese mashed potatoes.  Obviously this is not a low calorie meal.  In fact, my husband comment if I cooked like this all the time he would be 300 lbs.  These are simple, boil your clean potatoes cubed until tender then add about a cup of milk, garlic, garlic salt, around 3/4 cup of cheddar cheese and a little pepper and with a stick of butter.   Mix until smooth.  We like ours skin on. These were super amazing.

Can't have a southern meal without cornbread.   I used 2 packs of mix,  whichever brand you like best, a can of Mexican corn, about a half a cup of sour cream, a half a can of beer, and 2 eggs because my mix called for eggs.  You could probably leave them out if yours doesn't call for them. I baked this at 400 degrees until solid in the middle.
And of course the turnip greens.  I picked a plastic grocery sack full of greens and cleaned and chopped. (My friend Sonja sent me her recipe which I tweaked just a bit for my family.)  Next I added 3-4 green onions,  about a Tbsp of sugar, a good shake (more if you like spicy, we do) of red pepper flakes, garlic powder, garlic salt, season salt, and six slices of crispy bacon crumbled into a pot of 1 can of chicken broth and equal parts water.  After getting a nice boil on and letting them boil for about 20 minutes I turned them down and cooked on low about 2 hours.  They were ready to go before that but my husband and friend were fishing so we waited until about 2 to eat.  OMG we love them.  They were spicy and so good.

Nobody had room for the dump cake until later but it was a simple and perfect ending warm with a scoop of Blue Bunny frozen vanilla yogurt.  (I bought Blue Bunny because Blue Bell isn't in production right now and found out, I prefer Blue Bunny plus it is only 90 calories a serving. Because obviously after this meal we are all on a diet!)

Everyone was quiet when eating except to tell me how good everything was.  Now, time for a nice nap.

Bucket List: 10 things I want to do before I die

I was watching a balloon fly over Mckinney, Tx this morning and I thought to myself, that is something I would love to do.  Excited, I texted my hubby to suggest we get a balloon ride.  His response "No, thanks".   So, as chicken little doesn't want to ride in the blue sky romantically over the city, I suppose I will take the kid, or a dog, or who knows.

Time to drift off into the sky and watch the entire world shrink before your eyes on Cheyenne Hot Air Balloon ride! #HotAirBalloon

This got me thinking about Bucket Lists.   I found the summer one up above.   We make lemonade every week and I have already been fishing.  I could seriously use a car truck wash.  Maybe I should try to get these in....it couldn't hurt.  I know the star gazing isn't a problem, I go out almost every night for a few minutes to just look at the heavens.  What would be really fun is to go out to the middle of nowhere in the back of the truck and lay out under the stars and just gaze away.

Okay, but what about a Bucket List?   Here are a few things I would like to see or do before I die.

1.See a baseball game in all the Major League parks:
I have been to Rangers Ballpark Globe Life Ballpark a lot but it has been a long time since I have visited someplace else.  I have been to Wrigley, naturally. I have been to Busch but not for a game.  I have been to as many defunct parks as current.  Old Arlington Stadium was my 2nd home for a long time.  I was at games in Riverfront Stadium where the Reds use to play and Municiple Stadium where the Indians played.    Time to make a trip to Houston, I guess and start there.

2. Live on a lake or in the country:
Give me land, lots of land and the starry skies above.  Don't fence me in.   I want to spend my last part of my life somewhere where I can plant, grow, and spend time doing nothing.

3. See Wyoming:
My husband grew up in Wyoming and he has such wonderful memories and stories.  I want to go see this magical land.

4. Take my husband to Indiana:
My dad is buried there and his family is still there.  It would be nice to get a trip home sometime to introduce him to my northern family.  While we are there, we will visit the University of Notre Dame and he can watch me shop!

5. See my baseball team finally win a World Series:
This one is completely out of my control and it will take a miracle season to get them all healthy because that hasn't happened in 2 seasons.  I have been to the World Series, of course.  Four games to be specific, over 2 years.  I haven't seen the team I love most win a World Series.  Maybe when Yu is healthy and they figure out how to catch the ball again, we can get closer than 1 strike away.

6. Take my husband to a Cowboys game:
He loves them.  I hate Jerry Jones.  This makes me spending money on Cowboy tickets really hard to swallow.   I own maybe 1 Cowboys shirt because I refuse to support Jerrah.   I own about 100 Rangers shirts to put that in perspective, plus shoes, earrings, bracelets, necklaces, hair bands, well....You get the point.   My money goes across the street but just once, I would like to take the old man to see the team he has been a fan of since he was a kid growing up in Cheyenne.

7. See Garth Brooks Live:
Please come to Dallas, Garth.  I have seen Blake Shelton, Jason Aldean, Luke Bryan, Tim McGraw, Brad Paisley, but no Garth.  I need to see Garth.

8. Go fishing in the Ocean:
This one may happen soon.  Our 1 year anniversary is coming up in September and we are talking about going to the coast and renting a place for a few days and of course if we make it to Galveston, we are fishing in the ocean.

9. Have a paint fight:
This is something I totally want to do with the husband.  I would love to just go crazy paintball fighting him.  He will kill me because he is a better shot, but who cares.  I just need one good shot to make it worth it!

10. Sell a piece of furniture:
I know this should happen one of these days but I would love to actually sell some of the stuff I make.  It is beautiful and I love it but I can't keep it all.   With that in mind, my real dream is to have a little shop somewhere.   Oh, to be my own boss.   I even have a name but I have to have more than the big picture to make it work.   Baby steps.

As a bonus bucket list item I would Love, Love, Love to meet Joanna Gaines from Fixer Upper.  She is my hero.
